Fine dining can make even the most mundane night at home feel memorable; however, it can take people years to master. In fact, even a pre-prepared dish like a laksa meal kit can be tough to assemble. This rich and fancy meal requires tools many amateur cooks don't have at home, including a fluted pastry cutter and a pasta maker. It also requires skills best earned with a culinary degree. However, with practice and the right materials, you'll impress guests with this luxurious recipe.
Make pasta dough: Mix semolina and flour in a large bowl. Create a well in the middle of the flour mixture and add 2 (non-beaten) eggs plus 2–3 tablespoons of ice water. Using a fork, stir the mixture until it begins to come together. Move the dough ball onto a gently floured surface and knead for two to three minutes until the dough is smooth. Wrap dough in plastic wrap and allow to rest for one hour.
Make filling: While the dough is resting, add half of the beaten eggs, garlic, grated parmesan, and ricotta to a food processor and blend. Add salt and pepper to taste. Store in the refrigerator.
Roll pasta: Divide pasta into four pieces. Run each quarter through a pasta machine on the widest setting. Slowly work the dough through the pasta rollers, fold in half the long way, and run it through again. Continue this process, decreasing the width of the machine setting until the pasta is translucent, smooth, and roughly 3/4 inch thick. Once the pasta has reached the desired thickness, cover it with a dry towel. Place a damp towel on top and set it aside.
Assemble pasta: Place your first pasta sheet on a clean work surface and, using a fluted pastry cutter, cut into 10-cm squares. Place 2–3 teaspoons of the ricotta filling in the middle of each square, pressing slightly on top to make an indentation in the filling. Crack one quail egg and separate the yolk and white. Place the yolk onto the indentation. Using a pastry brush, coat the ravioli edges with the egg white and place another pasta square on the top. Apply gentle pressure on the edges to seal the ravioli's two sides together. Repeat this process until you have used all of the filling, pasta, and eggs.
Cook pasta: In a large saucepan, bring salted water to a gentle boil and reduce heat to simmer. Add ravioli in small batches and cook until the pasta floats to the top (one to two minutes). Remove pasta from the pot using a slotted spoon.
While the pasta cooks, melt the butter on medium-high heat and add garlic. Cook the garlic butter for four to five minutes, until brown, then gently stir in the marjoram. Add salt and pepper to taste and top the ravioli. Sprinkle it with the remaining parmesan. Add fresh herbs if desired.

Remove the lobster head and reserve the tomalley. Cut the lobster tail in half lengthwise. Preheat your grill on high heat; brush the lobster tail with olive oil and season with salt and pepper to taste. Place the lobster tail on a baking tray and grill for 8 to 10 minutes until just cooked.
While the main event is grilling, melt the olive oil and butter over low heat and add the mustard seeds, lemon rind, and garlic. Simmer for 20 to 30 seconds until the mustard seeds begin to pop, then remove from heat. Whisk in the lemon juice, herbs, Dijon, and reserved tomalley. Season with salt and pepper.
Pour the mustard butter over the lobster tails and serve with your favorite side dish.
